The peculiarity of their approach results not only in machinery, but also in customized technologies that allow them to carry out every type of installation even in the most difficult situations.

Interview with Eliseo Bisello, Sales Manager at AM Technology

Easy Engineering: How was 2023 for your business, a short summary?

Eliseo Bisello: AM Technology is an Italian company in the field of industrial automation and produces proofing, cooling, freezing and handling equipment for different industries such as bakery, confectionery, ice cream, fresh pasta production, dairy, meat, fish etc. This variety of production systems has enabled us to get through the hard times of the pandemic. 2023 was the breakthrough year that showed an increasing recovery in the food industry: new enquiries and new projects knocked at our door.

E.E: What products/services did you launch this year?

E.B: 4 years ago, we started to study and design a new proofing machine for high-hydration doughs (Pinsa Romana, Focaccia, Puccia) and, thanks to the success of food products such as Pinsa Romana, we launched and promoted ‘Nuvola’ our multi-level proofing system for delicate doughs with 85% water content.

E.E: How did the market change, compared to previous years?

E.B: After Covid, the market has certainly changed and companies increasingly need customized plants to face space and production requirements. This is where AM Technology steps in, since it has always studied and designed customized plants for its customers.

E.E: What are the new challenges in your field of activity?

E.B: The new challenges are the continuous wish to get involved and to open up new markets beyond our national borders.

E.E: How did you overcome these challenges in this more competitive environment?

E.B: New collaborations with other Italian producers have led us to approach foreign markets thanks to participation in trade fairs such as IBIE in Las Vegas (2022) and IBA 2023 where we had the opportunity to meet potential foreign customers who were highly interested in the Pinsa Romana production line.

E.E: Tell us about product innovation and how will it impact the future?

E.B: Our greatest source of inspiration are our customers, whose requests inspire us to continuously innovate and find the most suitable solution for their specific needs. We always try to use technology in a simple context so as not to create systems that are too complex and difficult to use. Our philosophy, in fact, is ‘The simpler the better’.

E.E: How will product innovation help the customers?

E.B: We see technology and innovation as an unmissable opportunity that all companies must benefit from. We do not surrender to the idea that a company is technologically disadvantaged; in our vision for the future, every company, large or small, must have the most suitable technology to reach its maximum potential.

E.E: What are the industry trends in the markets you are currently active?

E.B: AM Technology has been active in the food industry for over twenty years, currently we have focused more on the bakery sector (bread, pizza, pinsa, focaccia, etc.). In this market, manufacturers are directing their research and development towards ecosustainability and new doughs that can meet the needs of a wide variety of consumers (protein bread, bio bread, bread with special flours, etc.) and each type of dough requires specific, tailor-made machines. Our product range is described on our website www.am-technology.com.

E.E: What do you think the trends will be next year?

E.B: For sure, production companies will continue the way to eco-sustainability with a focus on gluten-free, protein, biological and vegan products. There will be new products on the market and we will be ready to accept new challenges to offer our potential customers the most suitable automation.

E.E: What is the outlook for 2024?

E.B: We hope that we can continue to generate customer interest towards our products. In this connection we are developing more and more contacts on our Linkedin page and on our YouTube channel.

This spring we will be in Australia for a new spiral leavening and deep-freezing plant for pizza. New pinsa plants are also scheduled in Italy and a new project for Germany is also taking shape. We are even implementing our workforce due to the increased demand.

We therefore look forward to a 2024 full of new challenges and experiences.
