TT Italy S.p.A is an Italian manufacturer of industrial bakery equipment, specialized in process control. It was founded in 2003 by two young innovation-driven entrepreneurs and nowadays, with only 18 years of experience, stands out as the benchmark and world leader in the engineering and manufacturing of industrial cake lines, from the batter preparation to the final product.

Easy Engineering: What are the main areas of activity of the company?

TT Italy: In our headquarters we offer our customers the most advanced product technology and equipment for the bakery industry, specifically regarding the production of layer cakes, muffins, cupcakes, chiffon cakes and cheesecakes. We provide a constant assistance, both remote and on-site, from the concept of the line to the start-up as well as after sales.

Furthermore, along with TT LAB’s in-house food technologists, we give a high value to constant innovation, providing invaluable support to our customers in the reformulation of a recipe or in the development of a new product.

E.E: What’s the news for 2021 about new products?

TT Italy: TT Italy is a company driven by a continuous desire for innovation and product development.

Thanks to an excellent cooperation between the engineering and R&D department, for the year 2021, TT Italy has decided to add a new turnkey industrial line for the production of Celebration Cakes, completing the wide range of products made by TT lines.

E.E: What are the ranges of products?

TT Italy: TT Italy is world leader in technology and performance in the sector of cake lines and our expertise includes sponge cake lines and cake lines. Whether turn-key or add-on, TT Italy engineers and manufactures cake solutions tailored to your productivity and space requirements. We are also specialized in the engineering of Turbo Mixer, Humidity Controlled Cooling Tunnel, Ultasonic Cutter Guilottine, Robotic Decoration, Pasteurized Creams and Topping applications.

Besides bakery processing equipment, we also offer assistance and support to the customer thanks to our Food Technology Company, TT LAB, that provides product R&D services.

E.E: At what stage is the market where you are currently active?

TT Italy: Markets in the past months were greatly affected by Covid-19 pandemic and therefore we had to face unexpected challenges. We adapted to new ways of dealing with customers (video calls, online support, virtual presentations, …) while improving our knowledge in order be ready once the situation gets back to normal.

E.E: What can you tell us about market trends?

TT Italy: In the past few years the demand for healthier cakes, such as sugar free, gluten free and egg free products, has grown quite consistently. As a consequence, our in-house R&D department, TT LAB, carries our research in order to create tailor-made recipes according to the customer demands.

E.E: What are the most innovative products marketed?

TT Italy: TT Italy’s main core technology is the patented Turbo Mixer, designed to precisely emulsify and/or aerate cream and liquid batter by constantly controlling, in a precise manner the desired density of the final product. In a cupcake and deposited line, the Turbo Mixer is directly connected to the Volumetric Piston Depositor/Injector, which enables the dosing or the injection of the product by maintaining a constant feeding pressure. This closed system guarantees no contamination from the surrounding environment in a completely automatic way.
